Description
Aubergines are an excellent source of dietary fibre. They are also a good source of vitamins B1 and B6 and potassium. In addition, it is high in the minerals copper, magnesium, and manganese.
Recipe Suggestion
Soak 1 Teacup of dried Littler Finger Aubergine in 1 litre of cold water for about 10-15 minutes. Use the water to boil the aubergine. Add 1 large chopped tomato, salt, and chili to taste. Boil until it is soft. Add 1 tablespoon of Peanut butter and stir until peanut butter has dissolved to make a smooth sauce.
Serve with Millet meal, Cornmeal or sweet potatoes
